BACON AND CHEESE SAVOURY MUFFINS

INGREDIENTS

Wheat Flour - 2 cups
Yoghurt - 1 cup
Melted Butter - 1/4 cup
Bacon Chopped - 1/2 cup
Cheddar Cheese - 1/2 cup
Boiled Eggs Chopped - 2
Baking Powder - 1 Tbsp 

Garlic Powder - 1 Tsp
Green Chillies Chopped - 4
Spring Onions Chopped - 1/4 cup 

Coriander Leaves - 1/4 cup
Sugar - 1/2 cup
Crushed Pepper - To Taste
Eggs - 2
Salt - To Taste

METHOD

Preheat oven to 180*C for 15 minutes
Line muffin tray with cupcake liners
Sift dry ingredients together
Whisk wet ingredients together
Fold dry ingredients into wet ingredients
Add in chopped bacon boiled eggs grated cheddar 
chopped spring onions and chopped green chillies
Mix and transfer equal amounts to cupcake liners
Bake in the preheated oven for 25 - 35 minutes 
Makes 12 muffins

Notes:
Timing might vary with different brands of ovens available in the market
Check in between after 20 minutes 
Instead of spring onions I used 5 shallots chopped
Boiled and shredded chicken or vegetables can be added instead of bacon
Instead of wheat flour plain flour or oatmeal flour can be substituted

SPICY BEEF ROAST


SPICY BEEF ROAST

INGREDIENTS TO MARINATE

Beef - 1/2 Kg
Chilli Powder - 1 Tbsp
Pepper Powder - 1 Tbsp
Turmeric Powder - 1/4 Tsp
Ginger Garlic Paste - 2 Tsps
Salt - To Taste

Clean and chop beef into bite size pieces
Add rest of the ingredients and marinate for an hour.
Pressure adding 1/4 cup of water and cook till done

INGREDIENTS TO ROAST

Shallots - 10
Green Chillies - 2
Chilli Powder - 1 Tbsp
Pepper Powder - 1 Tbsp
Aniseed Powder - 1 Tsp
Coriander Powder - 1 Tsp

Ginger Garlic Paste - 1 Tbsp
Garam Masala Powder - 2 Tsps
Curry Leaves - 2 Sprigs
Coconut Oil - 4 Tbsps 
Salt - If Required

METHOD

Heat oil in a pan in medium flame
Add in the shallots and fry till golden
Add in half of the curry leaves and sauté
Add in ginger garlic paste and sauté well
Add in the curry leaves and spice powders
Sauté till combined and raw smell is no more
Add pressure cooked beef along with stock
Keep stirring till stock is absorbed and dry
Add remaining curry leaves and more oil
Stir once and remove pan from stove
Serve with mashed tapioca or rotis

Notes:

You can add more oil if you want to
Adjust spices to suit your palate
For a Kerala style of beef roast
add fried coconut pieces

EGGLESS ORANGE CAKE


EGGLESS ORANGE CAKE

INGREDIENTS 

Flour - 1 1/4 cup 
Baking Powder - 1 Tsp
Baking Soda - 1/2 Tsp
Condensed Milk - 1 cup
Butter - 125 gm
Orange Zest - 1 Tbsp 
Orange Juice - 3/4 cup
Sugar - 2 Tbsps 

METHOD 

Preheat oven to 180*C for 15 minutes 
Line and grease a baking tin 
Squeeze orange juice from oranges and mix in the sugar till it dissolves 
Sift dry ingredients together 
Add softened butter to condensed milk and mix well
Add orange zest and juice to this mixture 
Gently fold in dry ingredients into wet ingredients 
Pour cake batter into the prepared cake tin
Bake in the preheated oven for 35 - 40 minutes 

Notes:
Make sure that all ingredients are at room temperature 
A toothpick test can be done to check if the cake is done
Timing might vary with different brands of ovens available in the market

QUICK EASY MUFFINS



QUICK EASY MUFFINS 

INGREDIENTS 

Flour - 3 cups
Sugar - 1 1/2 cups
Baking Powder - 4 Tsps
Butter - 1/2 cup
Pineapple Essence - 1 1/2 Tsps
Oil - 1/2 cup
Milk - 1 cup
Eggs - 2

METHOD 

Preheat the oven to 200*C for 15 minutes 
Line muffin tray with cupcake liners 
Sift dry ingredients and set aside 
Melt butter in a saucepan 
Beat the eggs and keep aside 
Beat sugar butter and oil till fluffy 
Add in the beaten eggs 
Mix till well combined 
Gently fold in the dry ingredients 
Pour equal amounts of batter into cupcake liners 
Bake in the preheated oven for 25 minutes 
Makes 12 muffins 

Notes:
Do not over mix the batter
You can add any essence as you prefer
