KOOTANCHORU  ( ONE POT MEAL )

INGREDIENTS 

Rice - 1 cup
Toor Dal - 1/2 cup
Carrots - 2 Small
String Beans - 4
Potatoes - 3
Brinjals - 2 Small
Drumsticks - 5 Pieces 
Raw Banana - 1
Onions - 2
Green Chillies - 4
Red Chilli Powder - 3 Tsps
Turmeric Powder - 1 Tsp 
Grated Coconut - 1/4 cup
Asafoetida - A Pinch
Tamarind - Lemon Size
Salt - To Taste
Oil - 3 Tbsps 

INGREDIENTS TO TEMPER 

Mustard Seeds - 2 Tsps
Shallots - 5
Green Chillies - 4
Dry Red Chillies - 3
Curry Leaves - 3 Sprigs 
Coriander Leaves - 1/4 cup

METHOD 

Slice onion and green chillies 
Chop all the vegetables as desired 
Soak tamarind in 1/4 cup water
Pressure cook dal and rice with some turmeric powder and salt to taste
Heat oil in a wide large pan sauté onion green chillies and other veggies.
Add water as required spice powders tamarind water salt to taste and cook
When veggies are three fourth done add the cooked rice and dal
Once the rice and veggies mix are thoroughly cooked add asafoetida grated coconut stir and remove pan from stove
Heat ghee in another pan and temper mustard seeds curry leaves dry red chillies green chillies and shallots 
When shallots turn transparent or golden remove pan from stove and pour ghee over the kootanchoru 
Serve hot garnished with chopped coriander leaves with papad and pickle of your choice

Notes :

You can add vegetables of your choice
If you want your kootanchoru to be mushy add more water
A piece of raw mango can also be added if liked
Adjust spices to suit your taste
