CHOCO MOCHA MUFFINS


CHOCO MOCHA MUFFINS 

INGREDIENTS 

WET INGREDIENTS 

Buttermilk - 1/2 cup
Vanilla Essence - 1 Tsp 
Espresso Powder - 1/2 Tsp
Water - 1/4 cup
Eggs - 2
Oil - 1/2 cup

Make coffee with lukewarm water and espresso powder
Beat the eggs well
Mix all the wet ingredients in a bowl and whisk

DRY INGREDIENTS 

Plain Flour - 1 cup
Wheat Flour - 3/4 cup
Brown Sugar - 1 cup
Chocolate Chips - 1 cup 
Baking Powder - 1/2 Tsp
Baking Soda - 1 Tsp
Walnuts - 1/4 cup
Almonds - 1/4 cup
Cashews - 1/4 cup

Sift all the dry ingredients in a bowl
Chop the nuts 

METHOD
Preheat oven to 180*C
Line a muffin tray with paper cup liners
Chop walnuts and almonds 
Mix the wet ingredients and dry ingredients together 
Add in the chopped walnuts and almonds 
Mix well and drop in spoonfuls of the muffin mixture into the paper cup liners
Bake in the preheated oven for 20 - 25 minutes 

Note 
All ingredients should be at room temperature 
Make sure the oil is flavourless 
As I always mention time might differ with different ovens and the mode of cooking you choose ( gas / electric )
