KALKANDU PONGAL


KALKANDU PONGAL /KALKANDU SADHAM

INGREDIENTS 

Raw Rice - 1 cup
Split Moong Dal - 1/4 cup
Sugar Candy - 1 cup
Cardamom Powder - 1/2 Tsp
Fried Cashew Nuts - 10
Fried Raisins - 10
Saffron - A few strands
Warm Milk - 2 Tbsps 
Water - 4 cups
Milk - 1 cup
Ghee - 5 Tbsps 

METHOD 

Fry cashews and raisins in ghee and set aside 
Soak saffron strands in warm milk
Dry roast split moong dal till you get an aroma
Wash rice and pressure cook with roasted dal until soft
Add half of the milk to this and mash well
Transfer contents to a large pan and add powdered sugar candy cardamom powder
Add remaining and stir till adding ghee
Garnish with fried cashews raisins and saffron strands
Serve drizzled with a teaspoon of ghee

Notes :
Kalkandu is sugar candy
Adjust sweetness to suit your taste
