MASALA CASHEW NUTS

INGREDIENTS

Cashew nuts - 200 gm
Chilli Powder - 1 Tsp
Pepper Powder - 1/2 Tsp
Fennel Powder - A Pinch
Garam Masala Powder - A Pinch
Curry Leaves - 1 sprig
Ghee - 2 Tbsp
Salt - To Taste

METHOD 1

Mix spice powders and salt in a bowl and keep aside
In medium flame heat ghee in a pan and fry curry leaves and crush a little
Now to the same ghee add nuts and roast
Once golden or brown as per your liking switch off flame
Transfer roasted nuts to a ziplock bag or a bowl with lid
Tip in the mixed spice powders fried curry leaves and shake well till all the nuts are coated well
Cool at room temperature and store in air tight containers

Notes
Almonds cashews peanuts all can be tried in the same method

METHOD 2
Line a baking sheet with parchment paper
Mix all ingredients together and spread out evenly on the baking sheet
Preheat oven to 180 *C and bake for 5 minutes first
Then flip with a spatula and bake again for 5 more minutes
Leave to cool at room temperature and store in air tight containers
Take care not to over cook the nuts
