FLOURLESS ALMOND CAKE

FLOURLESS ALMOND CAKE

INGREDIENTS 

Almond Flour - 1 1/2 cups
Sugar - 3/4 cup 
Eggs - 4
Oil - 1/4 cup
Lemon Zest Grated - 1 Tsp 
Almond Essence - 1 Tsp 
Vanilla Essence - 1 Tsp 
Flaked Almonds - 1/2 cup

METHOD 

Preheat oven to 180*C for 15 minutes 
Grease and line a cake tin with butter paper 
Separate yolks from whites
Add sugar to the yolks and beat well
When smooth pale and fluffy add in the oil
Beat well again and add the essences and lemon zest
Mix well and tip in the almond flour
Gently fold until well combined 
In a separate bowl beat the egg whites
Add @ 2 Tbsps of sugar and beat until stiff peaks form
Fold in the beaten egg whites little at a time with the yolk mixture 
Pour the cake batter into the prepared cake tin
Sprinkle the flaked almonds on top evenly 
Bake in the preheated oven for 30 - 35 minutes 
Cool cake completely before slicing 

Notes:

Timing might vary with different brands of ovens available in the market 
Adding almond essence is optional 
Instead of sugar you can use sugar substitutes
