GRANOLA MUFFINS








GRANOLA MUFFINS 

INGREDIENTS 

Granola - 2 cups
Flour - 1 1/2 cups
Baking Soda - 1 Tsp
Buttermilk - 1 cup
Brown Sugar - 3/4 cup
Vanilla Essence - 1 Tsp 
Honey - 1/4 cup
Oil - 1/3 cup
Egg - 1

METHOD 

Preheat oven to 200*C for 15 minutes 
Line a muffin tray with cupcake liners 
Sift flour and baking soda together 
Whisk buttermilk egg brown sugar and oil
Add in the vanilla essence and mix well 
Fold in the dry ingredients and granola 
Fill in equal amounts of the mix into cupcake liners 
Bake in the preheated oven for 20 - 25 minutes 
Cool muffins in a wire rack before serving 
Drizzle some honey on top if liked

Notes:

Add in some dry fruits and nuts if liked to the muffin mix 
Adjust sweetness to suit your taste
