TEMPERED TAPIOCA

INGREDIENTS 

Tapioca - 1 Kg
Turmeric Powder - 1/2 Tsp 
Salt - To Taste

INGREDIENTS TO TEMPER 

Mustard Seeds - 1 Tsp 
Curry Leaves - 1 Sprig 
Green Chillies - 4
Grated Coconut - 1 cup
Dry Red Chillies - 4
Coconut Oil - As Required 

METHOD 

Clean the tuner and remove the skin
Wash again thoroughly
Cut into bite size pieces 
Add turmeric powder and salt to taste 
Add enough water just enough to cook 
Pressure cook until soft but not mushy 
Drain excess water and set aside 
In a pan heat oil in medium flame 
Add in mustard seeds and curry leaves 
Once they splutter add in dry red chillies 
Add in the green chillies and grated coconut 
Add salt to taste if necessary and mix
Sauté for a few seconds until combined 
Add in the cooked tapioca and mix well
Serve hot with fish curry or beef roast
Pickles also are a best accompaniment 

Notes:

Adding freshly grated coconut gives a better taste than desiccated coconut 
Coconut oil is mostly used while cooking tapioca as it adds a distinct flavour 
Adding turmeric powder is optional
