DRUMSTICKS AND JACKFRUIT SEEDS AVIYAL 

INGREDIENTS 

Drumsticks - 2
Jackfruit Seeds - 25
Red Chilli Powder - 1 Tsp 
Turmeric Powder - 1/4 Tsp 
Salt - To Taste
Mustard Seeds - 1 Tsp 
Curry Leaves - 2 Sprigs 
Dry Red Chillies - 3
Oil - 4 Tbsps 

INGREDIENTS TO GRIND 

Grated Coconut - 1 cup
Turmeric Powder - 1/2 Tsp 
Red Chilli Powder - 2 Tsps
Cumin - 1 Tsp 
Garlic Pods - 6

METHOD 

Coarsely pulse and grind the ingredients for grinding and set aside 
Clean and soak jackfruit seeds in water for 3 - 4 hours 
Scrape the outer brown skin and chop into bite size pieces 
Scrape outer skin and chop drumsticks lengthwise to finger length pieces
In a pan in medium flame cook the shallots drumsticks jackfruit seeds turmeric powder red chilli powder and salt to taste 
Once done add in the ground masala and stir lightly cover and cook for five minutes 
Remove pan from stove and set aside 
Heat oil in another pan and temper mustard seeds curry leaves and dry red chillies 
Pour tempered ingredients along with the oil over the cooked drumsticks and jackfruit seed mixture 
Serve hot with rice

Adjust spices to suit your taste
