THUMBPRINT COOKIES

INGREDIENTS

Flour - 2 cups
Cornflour - 1/4 cup
Butter - 1/2 cup
Sugar - 1/2 cup
Vanilla Essence - 1 Tsp
Egg - 1
Jam - As Required
Granulated White Sugar - 1/2 cup

METHOD

Preheat oven to 180*C for 15 minutes
Line a baking sheet with parchment paper
Sift all of the dry ingredients together
Whisk butter and sugar until fluffy
Add in the vanilla essence and mix well
Add in sifted dry ingredients
Knead until it all comes together
The dough should be soft and pliable
Chill in the refrigerator for 30 minutes
Form even sized balls from the dough
Roll each ball in the granulated sugar
Place in the baking sheet at equal intervals
Form a dent in the centre with the thumb
Fill in the dent with any jam you like
Bake in the preheated oven for 10 minutes

Notes:

Rolling cookies in granulated sugar is optional
I got 15 cookies
I used four different types of jam
Kissan Mixed fruit Jam
Homemade Strawberry Jam
Homemade Pineapple Jam and 
Kissan Berry Blast Jam
