AVAL PAYASAM / RICE FLAKES PAYASAM
INGREDIENTS
Rice flakes - 1 cup
Jaggery Syrup - 1 cup
Coconut Milk - 2 cups
Thick Coconut Milk - 1/2 cup
Cardamom Powder - 1 Tsp
Dry Ginger Powder - 1/4 Tsp
Cashews - 15
Raisins - 15
Coconut Chunks or Flakes - 2 Tbsp
Ghee - 4 Tbsp
METHOD
Heat 2 Tbsp ghee in a pan and fry cashews raisins and coconut chunks
Heat 2 Tbsp ghee in the same pan and roast the rice flakes
Add the jaggery syrup to this and cook till it thickens
Add the second coconut milk and cook the flakes till soft
When the mixture turns to a required consistency add the cardamom and dry ginger powder
Add the thick coconut milk and simmer for a few minutes
Serve garnished with fried cashews raisins and coconut chunks
Notes
Milk can be used instead of coconut milk but taste differs
If milk is used sugar can be added instead of jaggery to get Kheer consistency
Using coconut flakes or copra chunks is optional
