EGGLESS SOOJI CAKE

INGREDIENTS 

Sooji - 1 1/4 cup
Maida - 1/4 cup
Baking Powder - 1 1/2 Tsp
Baking Soda - 1/2 Tsp
Milk - 1 cup
Oil - 1/2 cup
Yoghurt - 3/4 cup
Vanilla Essence - 1 Tsp
Tooti Frooti - 1/2 cup
Maida - 1 Tsp

METHOD 

Add the 1 Tsp maida to the tooti frooti mix well and keep aside
Measure and sift dry ingredients
Measure sooji and set aside
Mix all the wet ingredients and add sugar to it
Whisk well till the sugar dissolves
Add the sooji and sifted dry ingredients to the wet ingredients
Cover bowl with a cling wrap and set aside for 30 minutes
In between after 15 minutes set oven to 180*C and preheat for 10 - 15 minutes
Meanwhile grease and prepare the cake tin for baking
Mix the tooti frooti to the cake batter and fold
Pour cake batter to the prepared tin and bake for 30 - 40 minutes till a toothpick inserted in the centre comes out clean

Notes :
Sooji is Semolina
Make sure the yoghurt is not sour
Make sure the oil is flavourless
You can add candied cherries and nuts if liked
I used ghee to grease the cake tin you can use butter or flavourless oil instead
