WATERMELON ICE CREAM
INGREDIENTS
Vanilla Ice Cream - As Required
Watermelon Chunks - As Required
Sugar - To Taste
METHOD
Remove seeds from watermelon
Chop into chunks
Pulse in a mixer
Need not strain
Heat sugar and watermelon in a pan
Keep stirring in medium flame till it is pulpy
Refrigerate for 4 hours
FOR THE ICE CREAM
Mix the watermelon pulp with the prepared vanilla ice cream.
Whip till mixed well
Freeze overnight

I made pulp with some chunks and did not liquidise it.
You can strain if you don’t like chunks in the ice cream.
Pink colouring can be added if liked.
