BRINJAL SIDE DISH FOR BIRIYANI 

INGREDIENTS

Brinjal - 5
Tomatoes - 3
Red Chilli Powder - 2 Tsp
Sambar Powder - 2 Tsp
Tamarind Water - 3/4 cup
Pepper powder - 1 Tsp
Curry leaves - 2 sprigs
Powdered jaggery - 1 Tsp ( optional ) 
Salt - to taste
Oil - 5 Tbsps 

INGREDIENTS TO MARINATE 

Red Chilli Powder - 2 Tsp
Turmeric Powder - 1/2 Tsp
Pepper Powder - 1 Tsp
Salt - to taste

Mix the above spices and marinate the sliced brinjal pieces for an hour.

METHOD

Heat oil in a pan and add the curry leaves 
Now add the marinated  brinjal slices and sauté till its 3/4 th done
Add the sliced tomatoes salt to taste and remaining spices sauté till raw smell is no more 
Add the tamarind water cover and cook
Add the sambar powder now and when the gravy thickens add powdered jaggery.
Simmer for 2 minutes and remove from stove

Note
Adjust spices to suit your palate
