💖PRAWNS THEEYAL
💖MASHED TAPIOCA 
💖WHITE RICE

PRAWN FRY

INGREDIENTS 

Prawns - 1 kg ( with shell )
Red Chilli Powder - 1 Tbsp
Turmeric Powder - 1 Tsp
Fennel Powder - 1 Tsp
Garam Masala Powder - 1 Tsp
Ginger and Garlic Paste - 2 Tsp
Curry Leaves - 2 sprigs 
Salt - To Taste
Coconut Oil - To Fry

METHOD
1. Remove head and shells and intestines from prawns and clean them well
2. To cleaned prawns add all the above ingredients except oil and refrigerate for an hour
3. Remove marinated prawns from fridge 30 minutes before frying
4. Heat oil in a pan and deep fry the prawns drain oil and serve hot

MASHED TAPIOCA

INGREDIENTS 

Tapioca - 1 kg
Turmeric Powder - 1 Tsp
Salt - To Taste

TO SEASON
Mustard Seeds - 1 Tsp
Dry Red Chillies - 4
Curry Leaves - 2 sprigs 
TO GRIND
Coconut - 1 cup
Turmeric Powder - 1/2 Tsp
Garlic Cloves - 6
Green Chillies - 3
Cumin Seeds - 1 Tsp
Salt - To Taste

Grind the above ingredients coarsely and keep aside 

METHOD
1. Peel brown skin of tapioca wash and cube them into medium sized pieces
2. Wash them well again twice or thrice to remove dirt
3. Pressure cook for two whistles with turmeric 
4. Drain water and lightly mash the cooked tapioca 
5. Heat oil in a pan and drop in mustard seeds curry leaves and dry red chillies
6. Once they burst add in the lightly mashed tapioca and stir well for a couple of minutes
7. Add salt to taste and the coarsely ground coconut masala 
8. Mix well simmer for five minutes and remove from stove.

Notes :
Some tapioca are tender and do not need pressure cooking 



PRAWNS THEEYAL

INGREDIENTS 

TO MARINATE
Cleaned Prawns - 300 gms
Red Chilli Powder - 1 Tbsp
Turmeric Powder - 1 Tsp
Fennel Powder - 1 Tsp
Pepper Powder - 1 Tsp
Salt - To Taste

Marinate prawns in chilli powder turmeric powder salt and fennel powder for half an hour 
In another pan pour in oil and fry marinated prawns . 
Keep aside

TO GRIND

Fresh Coconut - 1 cup
Red Chilli Powder - 1 Tsp
Coriander Powder - 1/2 Tsp
Fenugreek Powder - 1/2 Tsp
Coconut oil - 2 Tsp

Roast coconut with little oil as required
When it is browned switch off and add red chilli powder coriander powder and fenugreek powder to it 
Mix well allow it to cool and grind to a smooth paste

THEEYAL

Shallots or Onions - 100 gms
Green Chillies - 3
Tomatoes - 2 
Red Chilli Powder - 2Tsps
Garam Masala Powder - 1 Tsp
Tamarind Water - 3 Tbsps
Salt - To Taste

In a pan pour in oil and fry chopped onions and chopped green chillies
When golden add in chopped tomatoes and saute till mushy
Add the powdered spices and salt to taste 
Add some tamarind water cover and cook for a couple of minutes 
Now add the ground coconut paste and simmer for a couple of minutes more 
Add more water at this stage to get the required consistency you desire
Add the fried prawns cover and simmer for 5 minutes
Serve hot garnished with chopped coriander leaves
