BROWN RICE EGG BIRIYANI


Thanks to my son who introduced me to Brown Rice 

BROWN RICE EGG BIRIYANI

INGREDIENTS 
Brown Basmathi Rice - 2 cups
Cloves - 3
Cardamom - 3
Cinnamon - 1 inch piece
Star Anise - 1
Warm Water - 4 cups
Curd - 1 Tbsp
Tomatoes - 2
Onions - 2
Mint Leaves - 1/4 cup
Coriander Leaves - 1 cup
Ginger Garlic Paste - 2 Tbsp
Boiled Eggs - 4
Red Chilli Powder - 1 Tbsp
Turmeric Powder - 1/4 Tsp
Garam Masala Powder - 1 Tsp
Fried Cashew Nuts - 10
Butter or Ghee -  3 Tbsp 
Salt - To Taste

METHOD

1) Heat ghee in a pressure cooker      
2) Add whole spices when they are done add ginger garlic paste
3) Sauté till raw smell is no more and add chopped onion and green chillies 
4) When the onions turn pinkish or golden brown add the tomatoes and curd along with chopped mint and coriander leaves
5)Sauté till tomatoes are mushy add salt to taste and the powdered spices
6) Mix well and sauté for 3-5 minutes
7) Add the measured brown rice and sauté for a minute and add the boiled and shelled eggs
8) Now add the measured amount of warm water mix once and close the pressure cooker 
9) Keep for three whistles till done 
10) Garnish with fried cashew nuts and mint leaves. Serve hot. 

Note 
The number of whistles may vary with different pressure cookers available in the market
Adjust spices and condiments to suit your palate
