BITTER GOURD THEEYAL
( WITHOUT COCONUT )
INGREDIENTS
Bitter Gourd - 1 big
Onion - 1 big
Green Chillies - 2
Tomatoes - 2
Tamarind Pulp - 1 1/2 Tbsp
Water - 1/2 cup
Sambar Powder - 2 Tsp
Red Chilli Powder - 1 Tsp
Jaggery - 2 Tsp
Salt - To Taste
INGREDIENTS TO TEMPER
Oil - 2 Tbsp
Mustard Seeds - 1 Tsp
Curry Leaves - 1 Sprig
METHOD
Remove seeds and finely dice bitter gourd
Chop fine onion green chillies and tomatoes
Grate a small piece of jaggery keep aside
Heat oil in a pan and add the finely diced bitter gourd and fry to a golden brown
Remove from oil and transfer to a bowl
To the same oil add ingredients to temper and when they burst add in the chopped onion and green chillies
When onions turn golden brown add chopped tomatoes and sauté till mushy
Add salt to taste and all spice powders and sauté for a few minutes
Tip in the fried diced bitter gourd and mix well
Add tamarind pulp and water give a stir cover and cook till thick
