AVOCADO MUFFINS




AVOCADO MUFFINS 

INGREDIENTS 

Avocado - 1
Flour - 1 cup
Baking Powder - 1 Tsp 
Baking Soda - 1/4 Tsp 
Caster Sugar - 1 cup
Lemon Juice - 2 Tsps
Vanilla Essence - 1 Tsp 
Almonds - 1/4 cup
Raisins - 1/4 cup
Honey - 3 Tbsps 
Oil - 5 Tsps
Egg - 1

METHOD 

Preheat oven to 180*C for 15 minutes 
Line muffin tray with cupcake liners 
Sift all of the dry ingredients together 
Add caster sugar honey oil vanilla essence to egg and whisk until smooth
Add in mashed avocado and mix well
Add sifted dry ingredients and gently fold 
Add raisins and mix 
Divide batter between cupcake liners 
Top with almond flakes and a few raisins 
Bake in the preheated oven for 17 - 20 minutes 
Cool muffins in a wire rack 
Serve drizzled with some honey 

Notes:

Timing might vary with different brands of ovens available in the market
