MANGO SHRIKHAND

MANGO SHRIKHAND 

A simple and easy dessert to celebrate Holi!

INGREDIENTS 

Mango Pulp - 1 cup
Powdered Sugar - 1/2 cup
Hung Curd - 3 cups
Cardamom Powder - 1/2 Tsp
Pistachios - 4
Almonds - 4

METHOD

TO PREPARE HUNG CURD

Place curd in a sieve above a small vessel and leave it as such overnight in the refrigerator for the liquid to drain
Use the hung curd for the recipe

TO PREPARE MANGO SHRIKHAND

Combine chilled mango pulp, hung curd, powdered sugar and cardamom in a bowl.
Mix well to get a smooth paste
Serve chilled garnished with sliced pistachios and almonds

Note
Do not pulse or blend ingredients in a mixer as the creamy consistency will be lost
Soak Almonds and Pistachios in warm water for at least 30 minutes before use
Adjust sugar with sweetness of the mango
