PAAL KOZHUKATTAI ( RICE FLOUR DUMPLINGS IN COCONUT MILK )
INGREDIENTS
Idiyappam Flour - 1/2 cup
White Sugar - 2 Tsps
Thin Coconut Milk - 2 cups
Thick Coconut Milk - 1 cup
White Sugar - To Taste
Cardamom Powder - 1 Tsp
METHOD
To the flour add salt to taste and 2 Tsps of sugar
Add enough boiling water and knead to a smooth dough and set aside
In a pan pour in the thin coconut milk
Form small even sized balls from the dough
When the coconut milk starts to boil drop in the rice dumplings
Cook covered for 12 - 15 minutes until the dumplings are soft
Add in the cardamom powder and sugar to taste
Stir until the sugar is completely dissolved
Now add the thick coconut milk and simmer for a couple of minutes
Remove pan from stove and serve when paal Kozhukattai is warm
