My grandma's recipe with a little twist in my style ❤️
PORK STIR FRY
INGREDIENTS
Pork - 1 Kg
Clean pork and cut into small chunks.
TO MARINATE
Turmeric Powder - 1/2 Tsp
Tamarind Pulp - 1 Tbsp
Crushed Peppercorns - 2 Tbsp
Green Chillies - 3
Salt - To Taste
Marinate pork in the above ingredients for an hour.
Pressure cook till soft.
Drain fat and set aside.
TO GRIND
Coconut - One cup
Green Chillies - 4
Shallots - 1/4 cup
Garlic - 10 pods
Dry Ginger - 1/4 Tsp
Curry Leaves - 1 sprig
Peppercorns - 2Tsps
Turmeric Powder - 1/4 Tsp
Mustard Seeds - 1/4 Tsp
Salt - To Taste
Pulse or coarsely grind the above ingredients and keep aside adding very little water
TO SEASON
Drained fat or any oil or ghee as required
Mustard Seeds - 1 Tsp
Dry Red Chillies - 4
Crushed Peppercorns- 2 Tbsp
Red Chilli Powder - 3 Tsps
Curry Leaves - 2 sprigs
Shallots - 1/2 cup sliced / chopped
Green Chillies - 4 sliced / chopped
Salt - To Taste
METHOD
1. Heat fat in a pan and simmer till all
the water evaporates and the fat
alone remains
2. In a pan add required amount of
fat and add the mustard seeds dry
red chillies and curry leaves.
3. When they burst add the shallots
and green chillies.
4. When they turn brown add the
coarsely ground coconut paste.
5. Stir till raw smell is no more.
6. Add in crushed peppercorns
red chilli powder and salt to taste
and sauté for a few minutes.
7. Add in the cooked pork and stir till
dry.
8. Serve hot.
Note
I used only half the amount of drained and boiled fat.
So if you want to use all of it .. yes you can
Any kind of oil or ghee used will alter the taste
Adjust spices to suit your palate.
